Fermentation with frequent plunging of the cap. Long maceration with ageing – part in barrique – part in oak barrels for 18 months. Bottle ageing for 6 months.
Rubi red in colour, elegantly spicy, complex, reminiscent of blueberry, raspberry, cocoa and vanilla.
Full and especially harmonious flavour. Excellent with all red and white meats, and matured cheeses.
