Fermentation in stainless steel for 12 days, maceration for 15 days. Malolactic fermentation. It ages for 12 months, partly Slavonian oak casks, and partlyt in French oak barrels.Deep ruby colour. Dried plum fragrances, mineral impressions and suggestions of tanned leather. A firmly structured palate,with an impressive balance between tannins and the other components. It has a long, vivacious finale.Best served with egg-pasta dishes such as pappardelle in hare sauce, or with boar, or with any red meat, whether steak or stews.
