Fermentation in stainless steel vats, keeping the varieties separated, during 13 days. Maceration on the skins for 15 days with frequent pumping over. Malolactic fermentation and ageing in second and third passage barrique for 24 months.Pronounced ruby red colour. In the mouth is elegant, fruity ( cherry) and with good spiciness (clove). The attack offers dense, impressive pulp, and fine-grained tannins that marry beautifully with its alcohol; the result is a solidly-built, but not heavy or extractive, wine with a seamless, long-lingering finish.It is a perfect accompaniment to grilled red meat, beef stews and Pecorino cheeses, not too dry.
